Cinnamon Snowball Cookies Recipe - These bite-sized delights crumble in your mouth, revealing a buttery, nutty perfection. Preheat oven to 350ºF. Line cookie sheets with parchment paper.
Beat together butter and sugar in the bowl of an electric stand mixer fitted with the paddle attachment until lightened and creamy. Add vanilla extract and salt; beat to combine.
Add flour and chopped pecans, and mix on low until incorporated.
Using a small cookie scoop, scoop dough and shape dough into 1 inch balls. Place cookies on the prepared baking sheet.
Bake for 13 to 15 minutes, until lightly browned.
Allow cookies to cool slightly on a wire rack. Roll each cookie in powdered sugar.
Allow cookies to cool completely, and roll them again in powdered sugar before serving.
Notes:
You can make the cookies in the bowl of an electric stand mixer or in a bowl with a handheld electric mixer.
The dough will be crumbly. Make sure to keep mixing until it comes together.
You can use any nuts that you enjoy. Finely chop the nuts in a food processor.
